Where does the time go? Just yesterday I was sorting clothes, washing them and ironing them after our summer in Spain and now I am sorting, washing and ironing back in Spain again. Why is it that I always forget to have my sons buy wrinkle-free clothing?
Still with jet lag, I haven’t touched a pot or pan to cook, but I have enjoyed some of my mother-in-law’s home cooked food. There’s also a new tapa bar not too far from my relatives’s house here in León. For a euro (about $1.40) you get a 4-ounce glass of wine or beer along with a tasty tapa. Many tapa bars only have one or two tapas to choose from, but Boche offers from 5 to 6. It’s a great place to go to make a meal for less than $5.00 per person. If you visit León, it’s a great place to try some traditional Spanish food served as tapas.

Gazpacho is a cold soup from Andalucia, the warm area of southern Spain, but it’s enjoyed from people all over the country. Typical gazpacho is made with tomatoes, cucumber, onion, garlic, bread, garlic, olive oil and vinegar, but some modern version may be made with watermelon, strawberries, or other fruits and vegetables.
Spanish Salad – One day as I was daydreaming I was inspired to create this salad. The ingredients are commonly found in Spain. The country is known for it’s oranges, almonds, and delicious cheese so this combination is only natural. (If you are trying to eat dairy-free the cheese is optional, but for anyone else I definitely recommend using the Manchego cheese.)
Tortilla de Patata – You will find this dish anywhere you go in Spain. It’s served as a small tapa with bread, or as a ración or larger portion.
Roasted Red Bell Peppers -Roasted peppers are always on the menu at my house. They are so yummy, and according to Dr. Oz they are also good for your wrinkles. That’s a good enough reason for me to indulge.
Shrimp with Garlic – The secret to this dish is its simplicity. The five ingredients in this dish are all important players, but adding a splash of white wine is also good too.
